Here he breeds with passion the ancient native breed of the Garfagnina goat with whose milk, in a modern and creative way, obtains excellent products, truly natural and very digestible as goat's milk is leaner, does not irritate the intestine and is also richer in active ingredients. Elena's cheeses and ricotta are the result of passion, love for nature, research and imagination: the blue cheeses, with a more intense flavor, obtained through a manufacturing process that aims to produce small spots of edible mold in the dough are absolutely worth tasting.
